Chef's Table: As Manila's Sun Sets, its Culinary Stars Shine at City Garden Hotel's Encima Roofdeck Restaurant


July 29, 2017: A celebration at City Garden Hotel's Re-launched ENCIMA Roofdeck Restaurant, featuring bottomless delights and a Tex-Mex feast. I know you're as excited as I am, so let's discover the fever of this memorable night!



The place was a total blast with Makati's skyline as our backdrop. Mexican hats, a quirky table setup, and a surprise in the form of a square container at the center of each table. Ta-da! Like a magical cereal box, it held our canned drinks and beers on ice, making it super convenient for us to sip and chat without ever leaving our seats. Cool, right?



This is definitely a good place to spend the night with your colleagues, friends, or loved ones.


the event kicked off with a captivating live cooking demonstration by none other than Chef Dennis Peralta from Encima Roofdeck Restaurant.





Of course, everyone was mesmerized by the dishes he prepared for everyone. TEX-MEX cuisine it is!



The evening commenced with a delightful surprise – the Tex-Mex Salad. This innovative dish was served by artfully layering all the ingredients in a glass, then dramatically flipping it onto a plate, revealing an unexpected delight.




Now, let's talk about the real star of the show: Chili Pork Ribs. These dry-rubbed pork ribs are bathed in chipotle barbecue sauce and served with smoky corn and avocado salsa. The result? Incredibly tender ribs that I absolutely loved!


And while serving this, they chant *Chicken Chimichanga! Chicken Chimichanga!* over & over until all the tables had been filled. It was a deep-fried burrito with chicken filling served with Mexican fried rice and salsa on the side. A really filling plate it is!


Then, Chef Dennis prepared Huevos Rancheros, where he fried 2 tortilla bread and eggs with tomato chili salsa and a side of avocado slices.

Lastly, the Shrimp Fajitas were served on a sizzling plate with your freedom to choose if you wanted it that way or rolled up like a burrito. Anyhow, I would eat it whatever.
Those were the dishes that Chef Dennis demonstrated to us how he did it.



But that's not all. There are plenty more Tex-Mex dishes that were included in the buffet. Yes, that above is the menu of Unlimited Mexican Goodness. Don't forget about the bottomless Sangrias and Margaritas!

 Finally, dessert! I don't know that I'd like this loop thingy called Churros, because I don't like cinnamon but since I am too tempted (who won't be? Look at that!) I dragged myself into a piece and tried it with mango sauce. And who knows, I got 3 more plates and tried it with other sauces, but I think I like it most with the Mango; sweet and a little bit of tartness was perfect for these freshly cooked and crispy Churros. My fellow bloggers loved it as well.

The weather seemed tamed just in time for the program's opening. Thus, it was indeed a very successful event and a fantastic night!
